----------

Ingredients
-Lemon 3 pcs
-Honey 120g
-4 eggs (2 egg yolks + 2 eggs)
-Olive oil 25g
-Butter 70g

Tools you need to use
-Electronic scale
-Whisk
-Pot

 ----------

Let’s start baking!

1 After washing the lemon, zest the whole lemon. If you don't have a grater, you can cut it with a knife and then chop it. Try not to zest off to the white part, as it will have a bitter taste.

2 Squeeze the lemon juice out of all 3 lemons.

3 Put the lemon juice, lemon zest, 2 egg yolks, 2 eggs and honey into a ceramic bowl or a heat-proof glass bowl.

4 Use a pot of appropriate size so that the bowl can be placed on top the pot. Put a small amount of water in the pot so that the water does not touch the bottom of the bowl. Bring to a boil and turn to low heat. Place the bowl on the pot and keep stirring to prevent lumps until it thickens, about 10 minutes.

5 After removing from the heat, cut butter into small pieces, add butter and olive oil into the lemon mixture, and stir well until smooth. Pour into a glass bottle to cool.

Enjoy!

How to server?
Lemon curd can be served on bread, scone, biscuit, pancake, cake filling, lemon tart, puff filling, adding it to yogurt, and pour it on ice cream. . . and also! Because of the fragrance of olive oil, it is also very coordinated with grilled salmon or various seafood, and it can also be used as a salad dressing! Isn’t it just right for this summer!
