Lemon Curd

-Lemon 3 pcs
-Honey 120g
-4 eggs (2 egg yolks + 2 eggs)
-Olive oil 25g
-Butter 70g

Let’s start baking!

1 After washing the lemon, zest the whole lemon. If you don't have a grater, you can cut it with a knife and then chop it. Try not to zest off to the white part, as it will have a bitter taste.

2 Squeeze the lemon juice out of all 3 lemons.

3 Put the lemon juice, lemon zest, 2 egg yolks, 2 eggs and honey into a ceramic bowl or a heat-proof glass bowl.

4 Use a pot of appropriate size so that the bowl can be placed on top the pot. Put a small amount of water in the pot so that the water does not touch the bottom of the bowl. Bring to a boil and turn to low heat. Place the bowl on the pot and keep stirring to prevent lumps until it thickens, about 10 minutes.

5 After removing from the heat, cut butter into small pieces, add butter and olive oil into the lemon mixture, and stir well until smooth. Pour into a glass bottle to cool.
