Lime Basil Cookies

Ingredients
  • Low-gluten flour 250g
  • Butter 170g
  • 1 egg
  • White sugar 60g
  • A pinch of salt
  • Baking soda 2g
  • 1 lime
  • Basil leaves 6g

Let’s start baking!
1 Use an electric mixer to beat the butter until soft, add sugar, and beat until fluffy.
2 Give the rind of a whole lime, there is no scraper to cut off the rind and then chop it, do not cut into the white part. The basil leaves are also chopped.
3 Add eggs, lime zest, and basil leaves to the butter and mix well.
4 In another bowl, mix the low-gluten flour, baking soda, and salt.
5 Mix the dry ingredients into the wet ingredients in two batches until the dough forms. Wrap in plastic wrap and freeze for 15 minutes.
6 Do not over-knead the dough after taking it out of the refrigerator, knead it into the desired size according to your preference, put it on the parchment paper, or use a small ball scoop.
7 ake at 180 degrees for 10-12 minutes.

If you are not so lazy
Mix chopped pistachios into the dough, or roll into balls and coat.
Try yellow and green lemons which you prefer.
