Canelé - A specialty of the Bordeaux region of France, a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust. When East Meets West - Canele with salted egg yolk filling.
Madeleines - A traditional small cake from the Lorraine region in northeastern France, a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions.
